Lentils/Fasole Recipe

At long last Fr. Apostola has written down his recipe - I have been bugging him for years - for bean soup. It is astoundingly delicious, and I look forward every year to presanctified liturgy at St. Nick's where I have at least two bowls of the soup in its fasole form.

1 lb small lentils
1 medium to large onion
1-2 cloves garlic
1 large carrot
1 celery stalk
1-2 tbs "Italian Seasoning" herb mix
1/2 tbs pepper
3/4 cup olive oil
1 8oz can tomato sauce or 1 14oz can diced tomatoes and 1 tbs tomato paste

Wednesday Make-Ahead

The name of this recipe comes from the fact that it yields multiple meals. Prez had hers cold. I left out the raisins and had mine hot, with tons of hot sauce. Either way is delicious.

Simmer 1/4 cup quinoa in 1/2 cup vegetable broth for 12 minutes. Shut off heat, let sit 15 minutes. Shred 1/2 bunch of kale and steam until tender.
In a large bowl, mix quinoa, drained kale, 1/2 can Alaskan sockeye salmon (deboned and flaked), and 2 small scallions, sliced. Mix with 1/4 cup each yellow raisins and crumbled feta cheese. Add 1 tbsp cumin, freshly ground pepper and juice of 1/2 lemon. Mix well and serve cold (or hot).

Piccalilli Relish

Al recently told me that he had made relish from green tomatoes. I immediately asked for the recipe, as per my custom whenever he tells me of one of his cooking adventures, and he said he would send it as soon as he translated it from Lithuanian - it is his grandmother's recipe for piccalilli relish. Here it is, in English (Lithuanian version available upon request:)

12 lbs green tomatoes
3 lbs onions
3 red and 3 green peppers
1.25 cups salt
1.5 quarts vinegar
3 or 4 lbs light brown sugar
2.5 tsps allspice

Sneaky Mac And Cheese

This is so named because we have snuck in vegetables like cauliflower and kale for those who don't like veggies (ideal for children who are fussy). The amount of cheese may be too much - it turned out great but very cheesy. Adjust accordingly.
1 lb boiled pasta (we used rotini because that is what we had)
1 1/2 lb cheese ends (from the deli) or various cheeses of choice
1 cup shredded kale, stems removed
1 T each wheat germ and ground flax seed
1 cup milk
1 head cauliflower
bread crumbs for topping

When It Rains...

...it pours. We have not had a recipe on these pages for a while but now all of a sudden there are two at once. This is a dish from Aleppo, Syria courtesy of Nadia. It is called khudr al furn, or "vegetables of/in the oven".
2 lbs zucchini (4 or 5 normal-sized ones)
2 lbs tomato
1 eggplant
1 potato
1 green bell pepper
1 jalapeno
1 medium onion
1lb ground meat (hamburger, turkey, etc)
salt, pepper, allspice
1 small can (4oz) tomato paste

Foul Mudammas

White Bean And Escarole Soup

Stelle our gracious host made this delicious and hearty soup last night.
2 cloves of garlic, chopped
2 cans cannellini beans
2 heads of escarole
8-10 cups of chicken broth
1 wedge parmesan cheese

Saute garlic in olive oil until soft. Add escarole and saute until wilted. Add beans and broth. Add a few large cubes of cheese to the soup so that it melts into the broth. Serve with fresh parmesan sprinkled on top.

Horseradish-Cheddar Spinach Burgers

The key to this recipe is finding horseradish cheddar cheese. I have no idea how common this stuff is but it is delicious and a bit pricey. Therefore it makes a nice treat in this burger recipe.
2 lbs ground turkey
1/2 cup spinach, chopped
6 slices horseradish cheddar cheese
3T finely chopped onion
pepper
6 whole-wheat burger buns

Mrs. Gaba's Apple Pie

It has been a while since I posted a recipe, but it has been worth the wait - believe me. Here is the Gaba family recipe for apple pie. Let's start with the crust:
2 1/2 cups sifted flour
3/4 tsp salt
2/3 cup Crisco shortening
4 to 7 tbs ice water
Sift salt and flour. Cut in shortening using a pie tool until the size of a pea. Add water a little at a time until mixture holds together.
Divide into two parts. Roll between two sheets of wax paper. After filling is placed dampen edes with water and cover, slash near the center in several places and press edges with fork.
